FAT ഊർജ്ജ സാന്ദ്രമായ പോഷകം. കൊഴുപ്പ് ഭക്ഷണത്തിലെ ഒരു പ്രധാന ഘടകമാണ്, ഊർജത്തിൻ്റെ കേന്ദ്രീകൃത സ്രോതസ്സാണ്, ശരീരത്തിൽ നിരവധി പ്രവർത്തനങ്ങൾ ചെയ്യുന്നു.

ദൃശ്യമായ കൊഴുപ്പ്:
സസ്യ-ജന്തു സ്രോതസ്സുകളിൽ നിന്ന് വേർതിരിച്ചെടുക്കുന്നതും പാചകത്തിൽ ഉപയോഗിക്കുന്നതുമാണ് ദൃശ്യ കൊഴുപ്പുകൾ.

ഉദാഹരണത്തിന്: നെയ്യ്, വെണ്ണ, വിവിധ സസ്യവിത്തുകളിൽ നിന്ന് വേർതിരിച്ചെടുക്കുന്ന സസ്യ എണ്ണ, അരി തവിട്, ഒലിവ് ഓയിൽ തുടങ്ങിയ ഭക്ഷ്യവസ്തുക്കൾ.

അദൃശ്യ കൊഴുപ്പ്:
എല്ലാ ഭക്ഷ്യവസ്തുക്കളിലും ചില അളവിൽ അടങ്ങിയിരിക്കുന്ന മറഞ്ഞിരിക്കുന്ന കൊഴുപ്പുകളാണ് അദൃശ്യ കൊഴുപ്പുകൾ.

ഉദാഹരണത്തിന്: പാൽ, പരിപ്പ്, ധാന്യങ്ങൾ, പയർവർഗ്ഗങ്ങൾ, മുട്ട, മാംസം, മത്സ്യം മുതലായവയിൽ അടങ്ങിയിരിക്കുന്ന കൊഴുപ്പുകൾ.

കൊഴുപ്പുകളുടെ തരങ്ങൾ : 3 തരം കൊഴുപ്പുകളുണ്ട്

പൂരിത കൊഴുപ്പുകൾ (SFA):
പൂരിത കൊഴുപ്പുകൾ മോശം കൊഴുപ്പുകളാണ്, അവയുടെ ഉപഭോഗം പരിമിതപ്പെടുത്തണം. എസ്എഫ്എയുടെ അമിതമായ ഉപയോഗം രക്തത്തിലെ എൽഡിഎൽ കൊളസ്‌ട്രോളിൻ്റെ അളവ് വർദ്ധിപ്പിക്കുകയും ധമനികളെ തടഞ്ഞ് ഹൃദ്രോഗത്തിലേക്ക് നയിക്കുകയും ചെയ്യും.

ഉറവിടങ്ങൾ: വെണ്ണ, പാൽ, ചീസ്, വെളിച്ചെണ്ണ, പാം ഓയിൽ തുടങ്ങിയ സസ്യ എണ്ണകൾ.

മോണോസാച്ചുറേറ്റഡ് കൊഴുപ്പുകൾ (MUFA):
മോണോസാച്ചുറേറ്റഡ് കൊഴുപ്പുകൾ നല്ല കൊഴുപ്പാണ്, ഒരു ദിവസം കഴിക്കുന്ന മൊത്തം കൊഴുപ്പിൻ്റെ നല്ല അനുപാതത്തിൽ വേണം കഴിക്കാൻ. എൽഡിഎൽ കൊളസ്‌ട്രോളിൻ്റെ അളവ് കുറയ്ക്കാനും എച്ച്‌ഡിഎൽ കൊളസ്‌ട്രോളിൻ്റെ അളവ് കൂട്ടാനും MUFA സഹായിക്കുന്നു.

പോളിഅൺസാച്ചുറേറ്റഡ് കൊഴുപ്പുകൾ (PUFA):
പോളിഅൺസാച്ചുറേറ്റഡ് കൊഴുപ്പുകളിൽ രണ്ട് അവശ്യ ഫാറ്റി ആസിഡുകൾ അടങ്ങിയിരിക്കുന്നു: ഒമേഗ 3 ഫാറ്റി ആസിഡുകളും ഒമേഗ 6 ഫാറ്റി ആസിഡുകളും. ഹൃദ്രോഗങ്ങളിൽ നിന്നും ഉയർന്ന രക്തസമ്മർദ്ദത്തിൽ നിന്നും സംരക്ഷിക്കാൻ അവ സഹായിക്കുന്നു.

ട്രാൻസ് ഫാറ്റുകൾ:
ട്രാൻസ് ഫാറ്റുകളെ ‘മോശം കൊഴുപ്പ്’ എന്ന് വിളിക്കുന്നു, ദ്രാവക കൊഴുപ്പ് അതായത് സസ്യ എണ്ണ ഖരരൂപത്തിലേക്ക് പരിവർത്തനം ചെയ്യുമ്പോൾ ഉത്പാദിപ്പിക്കപ്പെടുന്നു. ട്രാൻസ് ഫാറ്റ് ഉപഭോഗം ഹൃദ്രോഗം, പ്രമേഹം, ഉയർന്ന കൊളസ്ട്രോൾ, ഉയർന്ന രക്തസമ്മർദ്ദം തുടങ്ങിയ വിവിധ വിട്ടുമാറാത്ത രോഗങ്ങൾക്ക് കാരണമാകും.

Fat is an important component of diet, a concentrated source of energy and serves a number of functions in the body.

1 gm of Fat gives 9 Kcals.
It is mainly used for the absorption of fat soluble vitamins like A, D, E and K. Dietary fats are the only source of essential fatty acids as they cannot be produced in the body.

Fat also plays a vital role in maintaining healthy skin and hair, protecting body organs against shock and other environmental stress by acting like a cushion, maintaining body temperature and promoting healthy cell function.

Fats exist in two forms: Visible Fat and Invisible Fat:

Visible Fat
Visible fats are those which are extracted from plant and animal sources and are used in cooking.

For example: Ghee, butter, vegetable oil extracted from various plant seeds and food stuffs like rice bran oil, olive oil, etc.

Invisible Fat
Invisible fats are those hidden fats which are present in all food stuffs in some quantity and also contribute to our total fat intake.

For example: Fats present in milk, nuts, cereals, pulses, egg, meat, fish etc.

TYPES OF FATS: There are 3 types of fats

Saturated Fats (SFA):
Saturated fats are the bad fats and their intake should be limited. Excessive intake of SFAs increases LDL cholesterol levels in the blood and can lead to heart diseases by blocking the arteries.

Sources: Butter, milk, cheese, vegetable oils like coconut oil and palm oil.

Monounsaturated Fats (MUFA):
Monounsaturated fats are good fats and should be eaten in good proportion of the total fats eaten in a day. MUFA help in lowering LDL cholesterol levels and increase HDL cholesterol levels.

Sources: Rice bran oil, olive oil, almonds and cow’s ghee.

Polyunsaturated Fats (PUFA):
Polyunsaturated fats consist of two essential fatty acids: omega 3 fatty acids and omega 6 fatty acids. They help in protecting from heart diseases and high blood pressure.

Sources: Omega 3 fatty acids – Flaxseeds, walnuts, fish, soyabean oil, green leafy vegetables. Omega 6 fatty acids – Rice bran oil, evening primrose oil

Trans Fats:
Trans fats are called ‘bad fats’ and are produced when liquid fat i.e vegetable oil is converted to solid. Trans fat consumption can lead to occurrence of various chronic diseases like heart diseases, diabetes, high cholesterol and high blood pressure,

Ghee is a very good source of fat which is clarified form of butter and does not contain any other substances like milk solids, lactose, casein etc. We have been consuming ghee from ancient times but since last one decade, there has been a

misconception established about Goodness of Ghee among people. It has been perceived that ghee is fattening and is very harmful for our health but very few people know that ghee has got several health benefits. It is rich in antioxidants and vitamins like A, D and E which are needed for good heart health and for delaying the ageing process. Instead of increasing cholesterol levels, ghee reduces the cholesterol formation by de-stressing our body and thus helps in preventing heart diseases. Ghee is also beneficial for knee joints as it helps in their lubrication and reduces pain. Though ghee is high in calories but it has got lipolytic properties 1.c. it helps in the breakdown of fats. It also helps in the mobilisation of fats stored in the stubborn areas of the body and gives a feeling of fullness and thus restricts the excess food intake. So instead of increasing weight, it helps in burning of fats from the body and supports weight loss.

Even though there are various health benefits of ghee, it should be taken in the recommended quantity to enjoy all its goodness. Among different type of ghee, cow’s ghee should be preferred as it is rich in vitamin A & D and buffalo’s ghee should be avoided.

Among vegetable oils, Rice bran oil is the healthiest oil because of its fatty acid composition.

Rice bran oil is the oil extracted from the hard outer brown layer of rice after chaff (rice husk). It is notable for its high smoke point of 232°C and its mild flavour, making it suitable for high-temperature cooking methods such as stir frying and deep frying. Foods fried in rice bran oil also absorb

lesser oil. It is popular as cooking oil in several Asian countries, including Bangladesh, Japan, India and China. Physical refining process is used for refining of rice bran oil which does not use any harsh chemicals while refining. This results in better retention of antioxidants and other important benefits of oil.

Rice bran oil has an almost balanced fatty acid composition with equal proportion of saturated fats, monounsaturated fats and polyunsaturated fats as recommended by governing health bodies. It is rich in monounsaturated and polyunsaturated fats and free of trans-fats.

It contains anti-oxidants like oryzanol, tocopherols and tocotrienols. Oryzanol found in rice bran oil is helpful in reducing cholesterol and increases HDL (Good cholesterol) levels. It prevents oxidative damage due to ageing and prevents the signs of ageing like dark spots and wrinkle formation. It also helps in lowering the blood pressure and is involved in blood sugar management by increasing the efficiency of insulin. Tocopherols and tocotrienols (forms of vitamin E) present in rice bran oil enhance the functioning of the immune system. It prevents the risk of cancer, cataract and heart diseases. Rice bran oil has been proved to reduce post menopausal symptoms like hot flashes among women. It also helps in preventing acidity and strengthens the muscular system.

15 ml of Rice Bran oil should be taken daily to remain healthy and for preventing the risk of chronic diseases.

Today’s scenario
Though the recommendation of fat intake per day is 20% of the total calories considering an intake of 1800 Kcals, the actual consumption of fat is much more than recommendation because of excessive intake of processed and junk foods like samosa, kachori, puri etc. This excess intake of fat leads to various health problems like obesity, heart diseases, diabetes, fatty liver and high cholesterol among people.

It is recommended to check body fat percentage and if it is above 24% in men and above 30% in women, you should avoid saturated fats and trans fats in the daily diet and prefer using cow’s ghee and rice bran oil as a source of fat for cooking in the recommended quantity to stay healthy and live longer.
